Peanut Butter Ramen: A Creamy Twist on a Favorite

A Favorite with a Twist
Ramen is one of Ermias’s favorite meals, but only if the sauce is creamy and smooth—no chunks allowed! Tonight, we decided to get creative with what we had on hand, using up what’s left before our next grocery haul. We’re preparing for some big changes in how we shop and eat, and this little experiment turned out to be a delicious surprise: peanut butter and creamy salsa verde ramen.

How We Made It

  1. Microwaved the ramen noodles and drained them, making sure to save the hot water.

  2. Mixed the hot water with peanut butter and Old El Paso creamy salsa verde sauce.

  3. Stirred everything together until it reached the smooth, creamy consistency Ermias prefers.

I didn’t use any exact measurements—just eyeballed it until it felt right. The salsa verde has a nice little kick to it, and when combined with the peanut butter, it made for an unexpectedly good flavor combination.

Why It Works for Ermias
If there’s one thing I’ve learned, it’s that textures matter just as much as flavors for Ermias. He loves creamy sauces, and if something has chunks, he’s not touching it. So blending up sauces has been a great way to make sure he enjoys his meals while also sneaking in new flavors. This has me thinking—maybe blending fresh veggies into sauces will be a good way to expand his palate without him even realizing it. Worth a try!

Using Up What We Have
This meal wasn’t just about getting creative—it was about finishing what’s left before making some necessary changes to our grocery shopping. We’re being mindful about what we buy next, making sure to pick foods that work better for Ermias’s evolving tastes and needs. No food goes to waste, and every meal is a small step toward our new approach.
