A Fresh Start: Embracing April

Good morning, beautiful people!

Today is the last day of March, and it’s time to get myself in gear for a fresh start in April. I’ve been saying we’ll dive into recipes and updates on Ermias’ picky eating—and trust me, we will. But I have to pace myself, pushing forward without burning out. Change doesn’t happen overnight; it’s all about gradual progress and celebrating small victories.

This journey is still new, and balancing everyday life with blogging and creating new meals for my son is a challenge. Writing things down is easy—doing them is the real work! But I remind myself that it doesn’t have to be complicated. Ermias (and I) need a change, so why not document it along the way? Just one extra step.

And let’s be real—we could all use a good fridge clean-out or a pantry overhaul. That’s my plan for today (aside from caring for Ermias). I’ll go through everything, take stock of what we have, and create meals that focus on what Ermias needs most in his diet.

I’m thinking about making a simple sauce for some elbow noodles—maybe blending up beans and veggies for extra nutrients. Will Ermias like it? Who knows! But it’s worth the effort to try, and maybe it’ll become a new staple in his diet.
