๐Ÿฅ• Hidden Veggie Mac & Cheese (Classic Cheddar Flavor)

This recipe blends butternut squash and carrots for a smooth, creamy sauce with that perfect orange color.

๐Ÿง€ Ingredients:

  • 1 ½ cups elbow macaroni

  • 1 cup butternut squash (cubed)

  • 1 medium carrot (chopped)

  • 1 cup shredded cheddar cheese

  • ½ cup milk

  • ½ teaspoon garlic powder

  • ½ teaspoon onion powder

  • Salt to taste

1️⃣ Boil the veggies: Cook the butternut squash and carrot in a small pot until soft (about 10-12 minutes). Drain.
2️⃣ Blend the sauce: In a blender, mix the cooked veggies, milk, garlic powder, onion powder, and a pinch of salt until smooth.
3️⃣ Cook the pasta: Boil macaroni according to the package instructions. Drain.
4️⃣ Combine everything: Mix the pasta, veggie sauce, and cheddar cheese in a pot over low heat until creamy.

Sweet potatoes and cauliflower add creaminess and keep the mac and cheese beautifully orange!

  • 1 ½ cups elbow macaroni

  • 1 cup sweet potato (peeled and diced)

  • ½ cup cauliflower florets

  • 1 cup shredded mild cheddar cheese

  • ½ cup milk

  • 1 tablespoon butter

  • ½ teaspoon paprika

  • Salt to taste

1️⃣ Steam the veggies: Cook the sweet potatoes and cauliflower until fork-tender.
